Yes, I do know what you mean. I’ve been there too. If the pose is perfect, the photo is out of focus. If it’s in focus, the pose is all wrong. LOL. That’s where the artist comes in. Your drawing is so much better than the reference!

Yes, I do use a screen protector. I use Paperlike, which I bought on Amazon. You have to be very careful though to get the right size for your screen, because different iPads have different screen sizes. It’s a little fiddly to apply, but it’s been worthwhile for me.
